Keto Breakfast Casserole

Ingredients
- 3 oz. Crumbled feta cheese
- 10 Slices of cooked bacon crumbled
- ½ tsp Garlic powder
- 2 c. Fresh spinach
- 8 Large eggs beaten
- ½ c Chopped red, yellow and orange bell peppers
- ¼ c Chopped onion
Instructions
- First, Preheat the oven to 350 degrees.
- Second, In a mixing bowl, combine all of the ingredients except the fresh spinach. Stir to combine completely.
- Next, Place 2 cups of fresh spinach leaves in the bottom of a greased loaf pan.
- Pour the egg mixture over top of the spinach leaves in the loaf pan, and spread into an even layer.
- Bake the mixture in the loaf pan uncovered for 35-40 minutes until the egg is completely cooked through.
- Garnish with freshly chopped parsley or green onions if desired.
